Instructions
- Use a food processor to finely chop the celery, onion, and carrots.
- Melt the butter in a large pot over medium-high heat, then add the chopped vegetables and sauté until caramelized.
- Add the chopped garlic and cook for an additional 1-2 minutes, then remove the soffritto from the pot.
- Add olive oil and ground beef to the pot, season with salt and pepper, and cook until browned.
- Remove the cooked beef and repeat the process with the sausage meat.
- Deglaze the pot with red wine, scraping up browned bits, then return the soffritto to the pot.
- Add crushed tomatoes, milk, basil, and parsley, mixing well, and bring to a boil.
- Reduce heat and simmer for 3 to 4 hours.
- Stir in heavy cream and Romano cheese, mix well, and adjust seasoning as needed.
