Ingredients

Soffritto

  • 2 Tablespoon olive oil
  • 6 Tablespoon butter
  • 1 large onion, finely chopped
  • 2 large carrots, finely chopped
  • 4 stalks celery, finely chopped
  • 3 cloves garlic, chopped

Bolognese

  • 1 pound ground chuck
  • 1 pound sweet Italian sausage meat
  • 1 tablespoon sea salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon nutmeg (optional)
  • 1 cup red wine
  • 84 ounces plum tomatoes (3 - 28 ounce cans)
  • ¼ cup Italian parsley, finely chopped
  • ¼ cup basil, finely chopped
  • 1 cup milk

Finish Sauce

  • 1 cup Romano cheese, grated
  • 1 cup heavy cream

Instructions

  1. Use a food processor to finely chop the celery, onion, and carrots.
  2. Melt the butter in a large pot over medium-high heat, then add the chopped vegetables and sauté until caramelized.
  3. Add the chopped garlic and cook for an additional 1-2 minutes, then remove the soffritto from the pot.
  4. Add olive oil and ground beef to the pot, season with salt and pepper, and cook until browned.
  5. Remove the cooked beef and repeat the process with the sausage meat.
  6. Deglaze the pot with red wine, scraping up browned bits, then return the soffritto to the pot.
  7. Add crushed tomatoes, milk, basil, and parsley, mixing well, and bring to a boil.
  8. Reduce heat and simmer for 3 to 4 hours.
  9. Stir in heavy cream and Romano cheese, mix well, and adjust seasoning as needed.
