Garlicky Baked Butternut Squash

vegan parmesan cheese or grated Parmesan cheese
Instructions
- 1. Combine parsley, olive oil, garlic, salt, and pepper in a large bowl.
- 2. Add the butternut squash to the bowl and toss to coat.
- 3. Transfer the mixture to an ungreased shallow 2-quart baking dish.
- 4. Bake uncovered at 400°F for 50-55 minutes until the squash is tender.
- 5. Stir in the Parmesan cheese before serving.
