Ingredients

The squash

  • 3 ½ pounds butternut squash, peeled and cut into 1-inch cubes

The seasoning

  • 2 tablespoons minced fresh parsley
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon pepper

The cheese

  • ¼-⅓ cup vegan parmesan cheese or grated Parmesan cheese

Instructions

  1. 1. Combine parsley, olive oil, garlic, salt, and pepper in a large bowl.
  2. 2. Add the butternut squash to the bowl and toss to coat.
  3. 3. Transfer the mixture to an ungreased shallow 2-quart baking dish.
  4. 4. Bake uncovered at 400°F for 50-55 minutes until the squash is tender.
  5. 5. Stir in the Parmesan cheese before serving.
