Vegan Double Chocolate Cookies

The chocolate
Instructions
- Combine the dry ingredients in a large mixing bowl.
- In a separate bowl, whisk together the softened butter, sugar, oil, and 1 tablespoon of water, then add the rest of the water.
- Slowly add the dry mixture to the wet ingredients and mix until just combined, then fold in the chopped chocolate.
- Cover the dough and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Form 12 small or 6 large balls of cookie dough and place them on the prepared baking sheet.
- Bake for 10-12 minutes or until the tops look just done, then cool on the baking sheet.
