Double Chocolate Vegan Protein Cookies

Ingredients

The cookie mixture

  • 1 ½ cups all-purpose flour
  • ½ cup almond flour
  • ¼ cup cocoa powder
  • ½ cup Vegava Chocolate Protein Powder
  • 1 tsp baking soda
  • ½ tsp salt

The wet mixture

  • 1 cup room temperature vegan butter
  • cup brown sugar
  • ½ cup coconut sugar
  • 1 ½ tsp vanilla extract
  • 2 units vegan egg replacements
  • 1 cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F and line 3 baking sheets with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, almond flour, cocoa powder, protein powder, baking soda, and salt.
  3. In a separate medium bowl, beat together the vegan butter, sugars, vanilla, and vegan egg replacements.
  4. Gradually add the dry mixture to the wet mixture until well combined, then fold in the chocolate chips.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Scoop the dough using a tablespoon and place 12 cookies on each baking sheet.
  7. Bake for 9 minutes, then cool on the baking sheet for 3 minutes before transferring to a cooling rack.
