Instructions
- Preheat the oven to 350°F and line 3 baking sheets with parchment paper.
- In a large bowl, whisk together the all-purpose flour, almond flour, cocoa powder, protein powder, baking soda, and salt.
- In a separate medium bowl, beat together the vegan butter, sugars, vanilla, and vegan egg replacements.
- Gradually add the dry mixture to the wet mixture until well combined, then fold in the chocolate chips.
- Chill the dough in the refrigerator for at least 30 minutes.
- Scoop the dough using a tablespoon and place 12 cookies on each baking sheet.
- Bake for 9 minutes, then cool on the baking sheet for 3 minutes before transferring to a cooling rack.
