Sesame Ginger Fish Cakes

Instructions
- Peel and chop the ginger, shallot, and garlic.
- Zest one lime and add the ginger, shallot, garlic, cilantro, and lime zest to a food processor.
- Squeeze the juice of the zested lime into the processor and pulse until chopped.
- Chop the fish into cubes and add to the processor along with fish sauce, sesame seeds, paprika, and arrowroot flour.
- Pulse quickly to mix without over-processing.
- Form the mixture into medium-sized patties, squeezing out excess moisture if necessary.
- Heat sesame oil in a skillet over medium-high heat.
- Cook the patties for a few minutes on each side until golden brown and cooked through.
- Transfer to a paper towel-lined plate to absorb excess oil, sprinkle with paprika, and serve with lime wedges.
