Almost Classic Chicken Pastina Soup

Ingredients

Vegetables

  • 3 large Carrots
  • 3 stalks Celery
  • 3 cloves Garlic
  • 1 medium Onion

Broth and Chicken

  • 6 cups Chicken Bone Broth
  • 2 large Chicken Breasts
  • 1 tsp Course Black Pepper
  • 2 tsp Kosher Salt

Pasta and Greens

  • 2 cups Baby Spinach
  • 6 ounces Ditalini or Pastina

Instructions

  1. Wash and prepare the vegetables by cutting the carrots, celery, and onion.
  2. Combine the vegetables in a dutch oven with the chicken broth, chicken breasts, salt, and pepper.
  3. Bring the mixture to a boil on the stove, then cover and transfer to the oven at 275°F for 2 hours.
  4. Cook the pasta separately according to package instructions and set aside.
  5. Remove the pot from the oven, shred the chicken, and blend the vegetables until smooth.
  6. Return the shredded chicken to the pot and add the spinach to wilt.
  7. Serve the soup over the cooked pasta and garnish with Parmesan cheese if desired.
