Instructions
- Wash and prepare the vegetables by cutting the carrots, celery, and onion.
- Combine the vegetables in a dutch oven with the chicken broth, chicken breasts, salt, and pepper.
- Bring the mixture to a boil on the stove, then cover and transfer to the oven at 275°F for 2 hours.
- Cook the pasta separately according to package instructions and set aside.
- Remove the pot from the oven, shred the chicken, and blend the vegetables until smooth.
- Return the shredded chicken to the pot and add the spinach to wilt.
- Serve the soup over the cooked pasta and garnish with Parmesan cheese if desired.
