Instructions
- Dice the onion and mince the garlic, then sauté them in olive oil in a large skillet until soft.
- Dice the red bell pepper and add it to the skillet, sautéing for an additional 1-2 minutes.
- Add the uncooked rice, turmeric, smoked paprika, and cayenne to the skillet and stir to combine.
- Pour in the chicken broth, stir briefly, and cover the skillet. Bring to a boil, then reduce heat and simmer for 15 minutes.
- After 15 minutes, add the frozen seafood and peas, folding them into the rice. Cover and cook for another 5-10 minutes until the seafood is cooked through.
- Top with chopped parsley and serve with lemon wedges, squeezing lemon juice over the dish before eating.
