Ingredients

The base

  • 2 Tbsp olive oil
  • 1 unit onion
  • 2 cloves garlic
  • 1 unit red bell pepper
  • 2 cups uncooked long grain white rice
  • 3 cups chicken broth
  • 1 cup frozen peas

The seasonings

  • ½ Tbsp turmeric
  • 1 tsp smoked paprika
  • ¼ tsp cayenne pepper

The seafood

  • ½ lb frozen seafood mix

Garnish

  • 1 unit fresh lemon
  • 1 handful fresh parsley, chopped

Instructions

  1. Dice the onion and mince the garlic, then sauté them in olive oil in a large skillet until soft.
  2. Dice the red bell pepper and add it to the skillet, sautéing for an additional 1-2 minutes.
  3. Add the uncooked rice, turmeric, smoked paprika, and cayenne to the skillet and stir to combine.
  4. Pour in the chicken broth, stir briefly, and cover the skillet. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. After 15 minutes, add the frozen seafood and peas, folding them into the rice. Cover and cook for another 5-10 minutes until the seafood is cooked through.
  6. Top with chopped parsley and serve with lemon wedges, squeezing lemon juice over the dish before eating.
