Simple Seafood Rice

Ingredients

The base

  • 1 cup dry jasmine rice

The seafood

  • 340 g squid (calamari) rings
  • 340 g raw shrimp, peeled and deveined

The vegetables

  • 1 small onion, diced
  • ½ red bell pepper chopped
  • ½ cup snow peas
  • 1 clove garlic, chopped

The seasonings

  • 1 tsp ghee
  • 1 tsp chopped fresh thyme
  • ½ tsp Himalayan salt
  • ¼ tsp ground white pepper

Instructions

  1. Cook the rice according to package instructions.
  2. Drain the squid rings and shrimp in a colander.
  3. Melt half the ghee in a wok over medium-high heat and sauté the onion, salt, and pepper until golden.
  4. Add the red bell pepper, snow peas, garlic, and thyme, sauté for 30 seconds, then remove from the wok.
  5. Increase the heat to high, melt the remaining ghee, and add the shrimp and squid rings.
  6. Sauté until the seafood turns opaque and the squid curls, about 3 to 4 minutes.
  7. Return the vegetables to the wok, add the cooked rice, and stir gently to combine.
  8. Serve immediately.
