Spring Pasta Salad

Ingredients

The pasta

  • 8 ounces short pasta

The vegetables

  • 1 cup fresh or frozen baby peas
  • 1 ½ cups fresh sugar snap peas
  • 1 cup julienned carrots
  • 4 ounces diced pimento
  • 4 green onions sliced
  • cup radishes
  • ¼ cup fresh parsley

The protein

  • 1 ½ cups diced cooked chicken

The dressing

  • ½ cup balsamic vinegar dressing

The cheese

  • 4 ounces goat cheese

Instructions

  1. Cook the pasta according to package directions, adding the baby peas, sugar snap peas, and carrots in the last two minutes of cooking.
  2. Drain and rinse the pasta with cold water, then drain again and transfer to a large bowl.
  3. Add the chicken, pimento, green onions, radishes, and parsley to the bowl.
  4. Toss with the desired amount of dressing and top with goat cheese if desired.
  5. Serve chilled or at room temperature.
