Spinach and Egg White Omelet

Ingredients

  • 3 egg whites egg whites
  • ½ cup spinach
  • ½ cup onion
  • 4-5 pieces grape tomatoes
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Spray a medium skillet with cooking spray and sauté the chopped onion for 3 to 4 minutes until translucent.
  3. Add the spinach and sauté until just wilted.
  4. Place the spinach-onion mixture in a small glass dish or skillet and crack the egg whites over top.
  5. Season with salt and pepper, add sliced tomatoes, and bake in the oven for 17 minutes.
  6. Serve with fresh fruit and enjoy!
