Multigrain No Knead Country Bread

Ingredients

The dough

  • 1 cup whole wheat flour
  • 1 cup unbleached all purpose flour
  • 1 cup multigrain flour
  • ¼ cup oat groats
  • ¼ cup bulgur wheat
  • ¼ cup sunflower seeds
  • ¼ cup flax seeds
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt
  • 2 cups warm water

Optional Garnish

  • to taste avocado oil
  • handful seeds and grains

Instructions

  1. Combine the dry ingredients in a large bowl and mix thoroughly.
  2. Add warm water and stir until a wet dough forms.
  3. Cover the bowl and let it rest in a warm place for 18 to 24 hours.
  4. Deflate the dough by poking and folding it, then transfer it to a loaf pan.
  5. Cover the pan loosely and let it rise for about 3 hours.
  6. Preheat the oven to 400°F; brush the top of the loaf with avocado oil and sprinkle with seeds if desired.
  7. Bake for 40 to 45 minutes until golden brown and crispy.
  8. Let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
