Ingredients

The dough

  • 3.25 cups unbleached bread or all-purpose flour
  • 1.5 teaspoons kosher salt
  • 1.5 teaspoons sugar
  • 1.5 teaspoons instant yeast
  • 1.5 cups lukewarm water
  • 2 tablespoons extra-virgin olive oil

The seeds

  • ¼ cup sunflower seeds
  • ¼ cup pumpkin seeds
  • ¼ cup sesame seeds
  • ½ to ¾ cup additional seeds for coating (optional)

For greasing the pan

  • Softened none unsalted butter

Instructions

  1. In a large bowl, whisk together the flour, salt, sugar, and instant yeast, then add the seeds and combine.
  2. Pour in the water and 1 tablespoon of olive oil, mixing until a sticky dough forms.
  3. Cover the bowl and let the dough rise in a warm place for 2 to 3 hours until doubled in size.
  4. Preheat the oven to 375ºF and grease a loaf pan with butter, optionally coating it with seeds.
  5. Once the dough has risen, coat the top with olive oil and flip it over to oil the other side.
  6. Shape the dough into a loaf and place it in the prepared pan, sprinkling with reserved seeds if desired.
  7. Let the dough rise again for 45 minutes to 1 hour until it has risen significantly.
  8. Bake the loaf for 45 minutes until the top is browned, then cool for at least 30 minutes before slicing.
