Instructions
- Mix all ingredients in a large bowl until combined.
- Cover the bowl with plastic wrap and let the mixture rise at room temperature for 12-18 hours.
- After rising, turn the dough onto a floured surface and fold it a few times.
- Cover the dough again and let it rest for 15 minutes.
- Shape the dough into a ball and place it seam side down on a floured cotton towel.
- Cover the dough with another towel and let it rise for about 2 hours.
- Preheat the oven to 450°F and place a cast iron pot with a lid inside to heat.
- After 30 minutes, carefully remove the pot and place parchment on the bottom.
- Transfer the dough into the pot seam side up and cover with the lid.
- Bake for 30 minutes, then remove the lid and bake for an additional 10-20 minutes until browned.
- Cool for 10-20 minutes before slicing.
