Ingredients

The dough

  • 3 cups 100% whole wheat bread flour
  • ¼ tsp instant yeast
  • 1 + 5/8 cups warm water
  • 1 + 1/4 tsp kosher salt

For dusting

  • as needed additional flour

Instructions

  1. Mix all ingredients in a large bowl until combined.
  2. Cover the bowl with plastic wrap and let the mixture rise at room temperature for 12-18 hours.
  3. After rising, turn the dough onto a floured surface and fold it a few times.
  4. Cover the dough again and let it rest for 15 minutes.
  5. Shape the dough into a ball and place it seam side down on a floured cotton towel.
  6. Cover the dough with another towel and let it rise for about 2 hours.
  7. Preheat the oven to 450°F and place a cast iron pot with a lid inside to heat.
  8. After 30 minutes, carefully remove the pot and place parchment on the bottom.
  9. Transfer the dough into the pot seam side up and cover with the lid.
  10. Bake for 30 minutes, then remove the lid and bake for an additional 10-20 minutes until browned.
  11. Cool for 10-20 minutes before slicing.
