Cheesy Heirloom Panini Batons

Ingredients

The spread

  • 1 clove garlic
  • 2 tablespoons extra-virgin olive oil
  • 1 cup ricotta cheese
  • ½ cup fresh basil
  • 1 bunch chives
  • ½ teaspoon fine grain sea salt

The panini

  • 1 package Mozzarella (preferably water-packed)
  • 1 small heirloom tomatoes, sliced ¼-inch thick
  • 1 flat slab ciabatta or sturdy focaccia bread
  • to taste salt and pepper

Instructions

  1. Make the basil-chive ricotta spread by blending garlic, olive oil, ricotta, basil, chives, and salt in a food processor until pale green.
  2. Cut the bread into one-inch thick strips and then in half horizontally.
  3. Drain the mozzarella and season with salt and pepper, slicing into ¼-inch thick rounds.
  4. Drizzle olive oil over the tomato slices.
  5. Assemble the panini by spreading the basil-chive mixture on both sides of the bread, adding mozzarella, and then placing the tops on.
  6. Cook the panini in a skillet or panini maker until the cheese is melted.
  7. Open each baton, add sliced tomatoes, close up, and enjoy.
