Cheesy Heirloom Panini Batons

The panini

Mozzarella (preferably water-packed)

heirloom tomatoes, sliced ¼-inch thick

ciabatta or sturdy focaccia bread

Instructions
- Make the basil-chive ricotta spread by blending garlic, olive oil, ricotta, basil, chives, and salt in a food processor until pale green.
- Cut the bread into one-inch thick strips and then in half horizontally.
- Drain the mozzarella and season with salt and pepper, slicing into ¼-inch thick rounds.
- Drizzle olive oil over the tomato slices.
- Assemble the panini by spreading the basil-chive mixture on both sides of the bread, adding mozzarella, and then placing the tops on.
- Cook the panini in a skillet or panini maker until the cheese is melted.
- Open each baton, add sliced tomatoes, close up, and enjoy.
