Ingredients

Heirloom Tomato Salad

  • 1 pound cherry heirloom tomatoes, quartered
  • cup roasted red bell pepper, thinly sliced
  • 2 tablespoons capers
  • ¼ cup parsley leaves, roughly chopped
  • ½ small lemon, juiced and zested
  • 2 tablespoons extra-virgin olive oil
  • to taste kosher salt and freshly ground black pepper
  • to taste goat cheese crumbles for garnish

Frico Cups

  • 2 cups Parmesan cheese, grated
  • 1 small lemon, zested

Instructions

  1. Prepare the heirloom tomato salad by tossing the tomatoes, roasted red bell pepper, capers, and parsley in a bowl with olive oil, lemon juice, and lemon zest. Season with salt and pepper.
  2. Fill the parmesan frico cups with about ¼ cup of the tomato mixture and garnish with additional salt, pepper, and goat cheese crumbles. Serve at room temperature.
  3. Preheat the oven to 375°F.
  4. Mix the grated Parmesan cheese and lemon zest in a bowl.
  5. On a Silpat mat on a baking sheet, drop slightly rounded tablespoons of the cheese mixture to form circles, leaving space between them.
  6. Bake for 8 minutes until lightly browned and bubbly. Quickly transfer the hot frico rounds to a muffin tin to shape them into cups.
  7. Let the frico cool in the tins for 3-5 minutes before removing. Repeat with the remaining cheese.
