Heirloom Tomato Caprese Frico Cups

Parmesan cheese, grated

Instructions
- Prepare the heirloom tomato salad by tossing the tomatoes, roasted red bell pepper, capers, and parsley in a bowl with olive oil, lemon juice, and lemon zest. Season with salt and pepper.
- Fill the parmesan frico cups with about ¼ cup of the tomato mixture and garnish with additional salt, pepper, and goat cheese crumbles. Serve at room temperature.
- Preheat the oven to 375°F.
- Mix the grated Parmesan cheese and lemon zest in a bowl.
- On a Silpat mat on a baking sheet, drop slightly rounded tablespoons of the cheese mixture to form circles, leaving space between them.
- Bake for 8 minutes until lightly browned and bubbly. Quickly transfer the hot frico rounds to a muffin tin to shape them into cups.
- Let the frico cool in the tins for 3-5 minutes before removing. Repeat with the remaining cheese.
