Panini Ingredients

whole grain sourdough bread

grated low-moisture part-skim mozzarella

Instructions
- Combine halved tomatoes, honey, vinegar, water, salt, and pepper in a pot and bring to a simmer.
- Cook the mixture, stirring occasionally, until thickened (30 to 50 minutes).
- Brush one side of each slice of bread with olive oil or melted butter.
- Spread a layer of tomato jam on one slice of bread and top with a mixture of mozzarella and Parmesan cheese.
- Sprinkle torn basil on top of the cheese, then place another slice of bread on top, jam-side down.
- Grill the sandwich until both sides are crispy and golden brown.
- Slice the sandwich in half and serve.
