Ingredients

Tomato Jam

  • 2 pints cherry tomatoes
  • 2 tablespoons honey or sugar
  • 2 tablespoons apple cider vinegar
  • ΒΌ teaspoon salt
  • Several twists none freshly ground black pepper

Panini Ingredients

  • 8 slices whole grain sourdough bread
  • 2 cups grated low-moisture part-skim mozzarella
  • 1 cup grated Parmesan cheese
  • 4 to 6 leaves fresh basil
  • to taste none olive oil or butter

Instructions

  1. Combine halved tomatoes, honey, vinegar, water, salt, and pepper in a pot and bring to a simmer.
  2. Cook the mixture, stirring occasionally, until thickened (30 to 50 minutes).
  3. Brush one side of each slice of bread with olive oil or melted butter.
  4. Spread a layer of tomato jam on one slice of bread and top with a mixture of mozzarella and Parmesan cheese.
  5. Sprinkle torn basil on top of the cheese, then place another slice of bread on top, jam-side down.
  6. Grill the sandwich until both sides are crispy and golden brown.
  7. Slice the sandwich in half and serve.
