Ingredients

The noodles and vegetables

  • 8 ounces dried soba noodles
  • 1 medium head broccoli

The protein

  • 12 ounces extra firm tofu

The seasonings and oils

  • 2 - 3 tablespoons extra virgin olive oil
  • to taste ponzu sauce
  • to taste everything bagel seasoning
  • peanuts

Instructions

  1. Bring a large pot of water to a boil and salt it well.
  2. Add the soba noodles and cook according to package instructions.
  3. About a minute before the noodles are done, add the broccoli and tofu to the pot.
  4. Drain the mixture well and transfer it to a large bowl or serving platter.
  5. Toss with olive oil, a splash of ponzu sauce, and season with salt if needed.
  6. Finish with a generous sprinkling of everything bagel seasoning and some peanuts.
