Instructions
- Bring a large pot of water to a boil and salt it well.
- Add the soba noodles and cook according to package instructions.
- About a minute before the noodles are done, add the broccoli and tofu to the pot.
- Drain the mixture well and transfer it to a large bowl or serving platter.
- Toss with olive oil, a splash of ponzu sauce, and season with salt if needed.
- Finish with a generous sprinkling of everything bagel seasoning and some peanuts.
