Ingredients

The chicken

  • 2 pounds chicken drumsticks

The brine (optional)

  • 1 cup pickle juice

The coating

  • 1 tablespoon baking powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried rosemary
  • 1 tablespoon avocado oil
  • to taste salt
  • to taste black pepper

Instructions

  1. Optional: Marinate the chicken drumsticks in pickle brine for 30 minutes to 2 hours.
  2. Preheat the air fryer to 400°F.
  3. Remove the chicken from the brine and pat dry with paper towels.
  4. In a bowl, mix baking powder, smoked paprika, garlic powder, dried rosemary, salt, and pepper.
  5. Coat the chicken with avocado oil and then with the seasoning mixture.
  6. Place the chicken in a single layer in the air fryer basket.
  7. Cook for 10 minutes, then flip the chicken and cook for an additional 8 to 12 minutes until the internal temperature reaches 165°F.
  8. Allow the chicken to rest for 10 minutes before serving.
