The chicken

  • 8 pieces skin-on chicken drumsticks

The seasoning mixture

  • 3 tablespoons olive oil

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked or sweet paprika
  • 1 tablespoon dry mustard (optional)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with foil or parchment paper.
  2. Mix garlic powder, onion powder, paprika, salt, and black pepper in a bowl.
  3. Add olive oil to the spice mixture and blend well.
  4. Allow chicken legs to come to room temperature.
  5. Coat the chicken legs with the seasoning oil mixture using a brush or your hands.
  6. Place the chicken legs in a single layer on the baking sheet, leaving space between them.
  7. Bake for 30 minutes on the middle rack.
  8. Brush the legs with the oil from the tray and bake for an additional 5-10 minutes until crispy.
