Easy Chinese Chicken

Ingredients

The chicken

  • lbs boneless, skinless chicken thighs (cut into 2-inch cubes)
  • ¼ cup soy sauce
  • ¼ cup water
  • 1 cup whole wheat flour
  • 4 tbsp coconut oil

The sauce

  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 1 tsp crushed red pepper
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • ¼ cup soy sauce
  • ½ cup water

Instructions

  1. Combine soy sauce and water in a shallow dish and marinate the chicken for at least 10 to 15 minutes.
  2. Coat the marinated chicken in flour.
  3. Melt coconut oil in a skillet over medium heat and cook the chicken until golden brown and cooked through, about 6 to 8 minutes.
  4. Remove chicken from the skillet, leaving the flavorful bits behind.
  5. In the same skillet, cook garlic, ginger, and pepper flakes for 30 to 60 seconds.
  6. Whisk in vinegar, honey, soy sauce, and water, bringing to a boil and cooking until thickened, about 2 to 3 minutes.
  7. Add the chicken back to the skillet, stir to coat in the sauce, and serve warm.
