Ingredients

  • 1 large ripe avocado, pitted & peel removed
  • 2 units eggs
  • ½ cup water
  • ¾ cup coconut sugar
  • ¼ cup brown sugar
  • 2 tsp non-dairy vanilla yogurt
  • 1 cup gluten-free all purpose flour
  • ¾ cup raw cacao powder
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350 degrees and grease an 8x8 glass baking dish.
  2. In a high-speed blender, blend the avocado and eggs until smooth and creamy.
  3. Add the remaining ingredients to the blender and blend well.
  4. Pour the batter into the greased baking dish.
  5. Bake for 30 minutes or until a toothpick comes out clean when inserted in the middle.
  6. Let the brownies sit for 15-20 minutes before cutting.
