Ingredients

Whole30 Meatballs

  • 2 cloves garlic
  • 5 pieces green onions
  • ¼ cup fresh cilantro
  • 2 cups Swiss chard
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon dried oregano
  • teaspoons salt
  • 1 pound ground pork
  • 1 pound ground beef
  • 2 tablespoons coconut oil

Chimichurri

  • ¼ cup fresh parsley
  • ¼ cup fresh cilantro
  • tablespoons fresh lemon juice
  • 2 cloves garlic
  • teaspoons dried oregano
  • 1 pinch salt
  • teaspoons crushed red pepper flakes
  • ½ cup olive oil or avocado oil

Instructions

  1. Prepare the chimichurri by combining all chimichurri ingredients in a food processor and processing until smooth. Chill until ready to serve.
  2. For the meatballs, combine garlic, green onions, and cilantro in a food processor and process until chopped.
  3. Add Swiss chard in batches to the food processor and process until uniform.
  4. Transfer the mixture to a bowl and add red pepper flakes, oregano, salt, ground pork, and ground beef. Mix until combined without overmixing.
  5. Shape the mixture into meatballs using a disher or spoon.
  6. Heat coconut oil in a skillet over medium heat and cook the meatballs until browned and cooked through.
  7. Serve the meatballs with the chimichurri sauce.
