Instructions
- Prepare the chimichurri by combining all chimichurri ingredients in a food processor and processing until smooth. Chill until ready to serve.
- For the meatballs, combine garlic, green onions, and cilantro in a food processor and process until chopped.
- Add Swiss chard in batches to the food processor and process until uniform.
- Transfer the mixture to a bowl and add red pepper flakes, oregano, salt, ground pork, and ground beef. Mix until combined without overmixing.
- Shape the mixture into meatballs using a disher or spoon.
- Heat coconut oil in a skillet over medium heat and cook the meatballs until browned and cooked through.
- Serve the meatballs with the chimichurri sauce.
