Instructions
- Zest two lemons and let the zest dry.
- Combine all master mix ingredients in a large bowl and whisk to mix well.
- Store the mix in an airtight container, adding the dried lemon zest once it's dry.
- To make a muffin, measure ½ cup of the mix into a mug or bowl.
- Add the egg and coconut milk or oil, mixing until smooth.
- Let the mixture sit for a minute to activate the lemon juice.
- Microwave the muffin for about 1 minute to 1 minute 20 seconds.
