Ingredients

The cake

  • 1 tablespoon almond flour
  • tablespoon coconut flour
  • ½-1 teaspoon lemon extract
  • 1 tablespoon sugar
  • ½ teaspoon baking powder
  • 1 large egg
  • 3 tablespoon milk

The vanilla glaze

  • 2 tablespoon powdered sugar
  • 1/16 teaspoon vanilla extract
  • 1 teaspoon milk

Instructions

  1. Combine the dry ingredients in a small bowl.
  2. In another bowl, whisk together the milk, egg, and lemon extract, then mix with the dry ingredients until just combined.
  3. Grease a large mug or deep bowl and pour in the batter.
  4. Microwave for at least 50 seconds or until a toothpick comes out clean.
  5. While the cake cools, prepare the glaze by mixing all the glaze ingredients until desired consistency, then top the cake.
