Instructions
- Soak the mesquite wood chips in water for 30 minutes.
- Rub the BBQ rub on both sides of the beef tenderloin.
- Let the beef sit at room temperature for about 30 minutes.
- Preheat the Big Green Egg to 275°F.
- Add the soaked mesquite wood chips to the charcoal.
- Place the beef tenderloin on the grill.
- Cook until the internal temperature reaches 160°F, allowing about 20 to 25 minutes per pound.
- Let the meat rest for 10 minutes before slicing into ¼ to ⅜ inch pieces and serve.
