Mesquite Smoked Beef Tenderloin

Ingredients

The beef

  • 1 lb beef tenderloin

The rub

  • 2 tablespoons Stubb's BBQ rub

The wood chips

  • 1 cup mesquite wood chips

Instructions

  1. Soak the mesquite wood chips in water for 30 minutes.
  2. Rub the BBQ rub on both sides of the beef tenderloin.
  3. Let the beef sit at room temperature for about 30 minutes.
  4. Preheat the Big Green Egg to 275°F.
  5. Add the soaked mesquite wood chips to the charcoal.
  6. Place the beef tenderloin on the grill.
  7. Cook until the internal temperature reaches 160°F, allowing about 20 to 25 minutes per pound.
  8. Let the meat rest for 10 minutes before slicing into ¼ to ⅜ inch pieces and serve.
