Ingredients

The beef

  • 2 pounds beef tenderloin

The seasoning

  • tablespoons olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon red pepper flakes
  • ½ teaspoon thyme (dried)
  • 1 teaspoon mustard seeds

Instructions

  1. Pat dry the beef tenderloin with a paper towel.
  2. Tie the roast with kitchen twine and tuck the tail of the tenderloin under the roast.
  3. Mix the spices in a small bowl, brush the meat with olive oil, and dredge it in the spices.
  4. Preheat the grill to high heat and brush the grate with oil to prevent sticking.
  5. Place the tenderloin on the grill, cover it, and grill until browned on all sides, rotating every 4 minutes.
  6. Grill the meat until the internal temperature reaches 130°F.
  7. Transfer the meat to a cutting board and allow it to rest for 15 minutes before slicing.
