Ingredients

The beef

  • 2 pounds beef tenderloin

The seasoning

  • 2 tablespoons olive oil
  • 1 ½ teaspoons sea salt
  • 1 tablespoon black pepper
  • 1 tablespoon dried parsley
  • ½ tablespoon garlic powder

Instructions

  1. Preheat the smoker to 120°C (250°F) using your preferred hardwood.
  2. Brush the beef tenderloin with olive oil.
  3. Mix the sea salt, black pepper, dried parsley, and garlic powder, then rub the mixture over the beef.
  4. Place the beef on the smoker away from direct heat and smoke for 1 hour or until the internal temperature reaches 110°F.
  5. Transfer the beef to a hot grill or cast iron skillet and sear on all sides for 5 minutes.
  6. Let the beef rest for 10-15 minutes before slicing and serving.
