Instructions
- Preheat the Big Green Egg to 400 degrees.
- Slice the Chateaubriand into 4-inch thick pieces and butterfly them to create 2-inch pieces.
- Coat each piece with olive oil and season with bourbon smoked sea salt and pepper.
- Grill the tenderloin pieces for 3 minutes on each side.
- Remove the pieces from the grill and tent them in foil for 10 minutes to allow the juices to redistribute.
