Ingredients

The meat

  • 1 piece Chateaubriand (Beef Tenderloin)

The seasoning

  • 2 tablespoons olive oil
  • to taste bourbon smoked sea salt
  • to taste pepper

Instructions

  1. Preheat the Big Green Egg to 400 degrees.
  2. Slice the Chateaubriand into 4-inch thick pieces and butterfly them to create 2-inch pieces.
  3. Coat each piece with olive oil and season with bourbon smoked sea salt and pepper.
  4. Grill the tenderloin pieces for 3 minutes on each side.
  5. Remove the pieces from the grill and tent them in foil for 10 minutes to allow the juices to redistribute.
