Instructions
- Prepare the Big Green Egg for indirect heat at 350 degrees using the plate setter.
- Rub the Tri Tip with olive oil, salt, and pepper.
- Roast the Tri Tip on indirect heat for 20 minutes or until it reaches an internal temperature of about 120 degrees.
- Increase the temperature to 500-600 degrees for searing.
- Sear the Tri Tip for 2 minutes on each side until it reaches an internal temperature of 130 degrees for medium rare.
- Let the Tri Tip rest under foil for 10 minutes before slicing.
- For the Blue Cheese Basil Butter, blend blue cheese, softened butter, fresh ground pepper, and basil together.
- Serve the sliced Tri Tip with the Blue Cheese Basil Butter.
