Tri Tip on Big Green Egg

Ingredients

The Tri Tip

  • 1 piece Tri Tip
  • 1 tsp olive oil
  • to taste none freshly grated pepper
  • to taste none freshly grated sea salt
  • a dash none smoked paprika (optional)

Blue Cheese Basil Butter

  • 4 oz blue cheese
  • 1 stick softened butter
  • to taste none fresh ground pepper
  • 1 tbsp basil

Instructions

  1. Prepare the Big Green Egg for indirect heat at 350 degrees using the plate setter.
  2. Rub the Tri Tip with olive oil, salt, and pepper.
  3. Roast the Tri Tip on indirect heat for 20 minutes or until it reaches an internal temperature of about 120 degrees.
  4. Increase the temperature to 500-600 degrees for searing.
  5. Sear the Tri Tip for 2 minutes on each side until it reaches an internal temperature of 130 degrees for medium rare.
  6. Let the Tri Tip rest under foil for 10 minutes before slicing.
  7. For the Blue Cheese Basil Butter, blend blue cheese, softened butter, fresh ground pepper, and basil together.
  8. Serve the sliced Tri Tip with the Blue Cheese Basil Butter.
