Ingredients

The Meat

  • 1.5 to 2.5 pounds Tri-Tip beef

The Seasoning

  • to taste Salt
  • to taste Pepper
  • optional BBQ rub or spices

Instructions

  1. Set up the grill for indirect cooking, creating hot and cold zones.
  2. Place the Tri-Tip on the cooler side of the grill with the thicker end closer to the heat.
  3. Close the lid and cook for about 20 minutes, then flip the meat.
  4. Cook until the internal temperature reaches 110°F, which may take 30-45 minutes.
  5. Move the meat to the hot side of the grill to sear for about 5 minutes on each side.
  6. Remove from heat and let rest for about 20 minutes.
  7. Slice the Tri-Tip in half, then cut against the grain into ½ inch slices.
  8. Serve with garlic bread to soak up the juices.
