Instructions
- Set up the grill for indirect cooking, creating hot and cold zones.
- Place the Tri-Tip on the cooler side of the grill with the thicker end closer to the heat.
- Close the lid and cook for about 20 minutes, then flip the meat.
- Cook until the internal temperature reaches 110°F, which may take 30-45 minutes.
- Move the meat to the hot side of the grill to sear for about 5 minutes on each side.
- Remove from heat and let rest for about 20 minutes.
- Slice the Tri-Tip in half, then cut against the grain into ½ inch slices.
- Serve with garlic bread to soak up the juices.
