Instructions
- Make the steak rub by combining all the spices in a small bowl and mix well.
- Trim any silver skin off the tri-tip and coat it with the dry rub on all sides.
- Let the tri-tip sit at room temperature for about 1 hour.
- Preheat the oven to 250ºF.
- Heat the avocado oil in a skillet over medium-high heat and sear the tri-tip on all sides until well-browned.
- Transfer the tri-tip to a roasting pan and insert a meat thermometer into the thickest part.
- Roast in the oven until the internal temperature reaches 130ºF for medium-rare or 140ºF for medium, about 30-40 minutes.
- Remove the tri-tip from the oven and let it rest for 10 minutes.
- Slice against the grain and serve with your favorite sauce.
