Ingredients

The meat

  • 2 lb tri-tip roast

The seasoning

  • 1 Tbsp fine sea salt
  • 2 tsp freshly ground black pepper
  • 2 tsp garlic powder
  • 2 tsp dried minced onion
  • 1 tsp dried lemon peel
  • 1 tsp paprika
  • ½ tsp smoked paprika
  • tsp cayenne pepper

The oil

  • 1 Tbsp avocado oil

Instructions

  1. Make the steak rub by combining all the spices in a small bowl and mix well.
  2. Trim any silver skin off the tri-tip and coat it with the dry rub on all sides.
  3. Let the tri-tip sit at room temperature for about 1 hour.
  4. Preheat the oven to 250ºF.
  5. Heat the avocado oil in a skillet over medium-high heat and sear the tri-tip on all sides until well-browned.
  6. Transfer the tri-tip to a roasting pan and insert a meat thermometer into the thickest part.
  7. Roast in the oven until the internal temperature reaches 130ºF for medium-rare or 140ºF for medium, about 30-40 minutes.
  8. Remove the tri-tip from the oven and let it rest for 10 minutes.
  9. Slice against the grain and serve with your favorite sauce.
