Oven Roasted Tri Tip

Ingredients

The roast

  • pounds tri tip roast

The seasoning

  • 1 tablespoon mixed peppercorns
  • 2 teaspoons sea salt
  • 2 teaspoons garlic powder

The cooking oil

  • 2 tablespoons avocado oil

Instructions

  1. Trim the silver skin from the bottom of the tri-tip.
  2. Crush the peppercorns and mix with salt and garlic powder.
  3. Spread the seasoning mixture on the outside of the roast and let it sit at room temperature for an hour or refrigerate overnight.
  4. Preheat the oven to 250°F.
  5. Place the roast in a pan and roast for 50 minutes until the thickest part registers 110°F.
  6. Heat oil in a skillet over medium-high heat and sear the roast on all sides until browned.
  7. Allow the roast to rest for 10 minutes before slicing against the grain.
