Instructions
- Trim the silver skin from the bottom of the tri-tip.
- Crush the peppercorns and mix with salt and garlic powder.
- Spread the seasoning mixture on the outside of the roast and let it sit at room temperature for an hour or refrigerate overnight.
- Preheat the oven to 250°F.
- Place the roast in a pan and roast for 50 minutes until the thickest part registers 110°F.
- Heat oil in a skillet over medium-high heat and sear the roast on all sides until browned.
- Allow the roast to rest for 10 minutes before slicing against the grain.
