Instructions
- Allow the tri-tip to come to room temperature.
- Prepare the spice mixture by mixing coffee, sea salt, black pepper, garlic powder, chipotle, and cumin in a bowl.
- Rub the tri-tip with the spice mixture and let it rest while preheating the oven to 350°F.
- Heat a pan over high heat and add olive oil.
- Place the tri-tip in the hot pan and cook for about 4 minutes on each side.
- Remove the pan from the stove and place it in the oven until the internal temperature reaches 135°F, about 15-17 minutes.
- Remove the tri-tip from the oven and let it rest for a few minutes before slicing and serving.
