Instructions
- Preheat the oven to 425°F.
- Trim any silver skin from the tri-tip and rub seasoning salt all over it.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the tri-tip fat-side down for 4 minutes until well-seared.
- Flip the tri-tip and place the skillet in the oven.
- Roast for 10 to 15 minutes per pound, checking the internal temperature after about 20 minutes.
- Cook until the internal temperature reaches 135°F for medium-rare or 145°F for medium.
- Tent with foil and let the meat rest for 10 minutes before slicing.
