Ingredients

The meat

  • 1 untrimmed tri-tip tri-tip

The cooking essentials

  • 2 tablespoons olive oil
  • to taste seasoning salt

Instructions

  1. Preheat the oven to 425°F.
  2. Trim any silver skin from the tri-tip and rub seasoning salt all over it.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the tri-tip fat-side down for 4 minutes until well-seared.
  5. Flip the tri-tip and place the skillet in the oven.
  6. Roast for 10 to 15 minutes per pound, checking the internal temperature after about 20 minutes.
  7. Cook until the internal temperature reaches 135°F for medium-rare or 145°F for medium.
  8. Tent with foil and let the meat rest for 10 minutes before slicing.
