Ingredients

The marinade

  • ¼ cup oil
  • 4 cloves garlic, minced
  • 3 tablespoons fresh rosemary, minced
  • 3 tablespoons fresh thyme, minced
  • 1 tablespoon salt
  • teaspoons black pepper

The main ingredient

  • pounds tri-tip roast

Instructions

  1. Combine oil, garlic, rosemary, thyme, salt, and pepper in a plastic bag.
  2. Pat the tri-tip dry and score the fat layer.
  3. Add the tri-tip to the bag, coat it with the marinade, and marinate for at least 1 hour.
  4. Let the tri-tip sit at room temperature for 30 minutes before grilling.
  5. Preheat the grill over high heat for 10 minutes and clean the grate.
  6. Grill the tri-tip over direct heat for 3 to 4 minutes per side until browned.
  7. Move the tri-tip to indirect heat and cook to desired doneness (20 to 30 minutes).
  8. Let the tri-tip rest for 10 to 15 minutes before slicing against the grain.
