Ingredients

The marinade

  • ¼ cup white miso
  • ¼ cup honey
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon hot sauce
  • 2 tablespoons vegetable oil
  • ½ cup water

The main ingredients

  • 1 pound chicken thighs
  • 1 bunch asparagus
  • to taste salt
  • to taste ground black pepper
  • for garnish scallions
  • for serving white rice

Instructions

  1. Prepare the marinade by whisking together miso, honey, soy sauce, rice vinegar, ginger, garlic, hot sauce, vegetable oil, and water.
  2. Marinate the chicken thighs for 30 minutes in the refrigerator.
  3. Preheat the oven to 205°C (401°F).
  4. Place the chicken thighs and asparagus on a baking pan lined with aluminum foil. Season asparagus with salt, pepper, and drizzle with oil.
  5. Bake for 15 minutes until the chicken is cooked through.
  6. Broil the chicken for an additional 3 to 5 minutes until slightly charred and the asparagus is tender.
  7. Serve with white rice and garnish with scallions.
