Ingredients

The marinade and chicken

  • 2 tablespoons miso paste
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 12 ounces chicken thigh, boneless, sliced
  • ΒΌ cup extra virgin olive oil

The noodles and vegetables

  • 2 bundles dry soba noodles
  • 2 red peppers sliced
  • 1 ounces rocket leaves, chopped in halves
  • 1 tablespoon roasted sesame seeds, for garnish

Instructions

  1. Marinate the chicken thigh in a mixture of miso paste, honey, and soy sauce for 10 minutes.
  2. Heat olive oil in a skillet and pan-fry the chicken for a few minutes until charred and cooked through.
  3. Cook the dry soba noodles according to the package instructions.
  4. Assemble the dish with the cooked noodles, chicken, red peppers, and rocket leaves.
  5. Garnish with roasted sesame seeds and drizzle with pan sauce.
