Chopped Chicken Sesame Noodle Bowls

Instructions
- Prepare the sesame sauce by blending all ingredients except sesame seeds and red pepper flakes until smooth, then stir in the seeds and flakes.
- Cook the soba noodles according to package instructions, then drain and set aside.
- In a skillet, heat oil and sauté the chicken seasoned with salt and pepper until golden. Add a portion of the sesame sauce to cook the chicken through.
- Once cooked, remove the chicken, let it cool slightly, and shred it.
- Finely chop or process the vegetables, removing excess moisture.
- Combine all ingredients and serve either hot or cold.
