Chopped Chicken Sesame Noodle Bowls

Ingredients

Sesame Sauce

  • 3 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 cloves garlic
  • 1 tablespoon fresh ginger
  • ½ teaspoon salt
  • ¼ cup peanut butter
  • 3–4 tablespoons water
  • 2–3 tablespoons sesame seeds
  • ½ teaspoon red pepper flakes

Other Ingredients

  • 1 lb. boneless skinless chicken breasts
  • 4 ounces soba noodles
  • 1 whole cucumber
  • 3 large carrots
  • 1 handful cilantro

Instructions

  1. Prepare the sesame sauce by blending all ingredients except sesame seeds and red pepper flakes until smooth, then stir in the seeds and flakes.
  2. Cook the soba noodles according to package instructions, then drain and set aside.
  3. In a skillet, heat oil and sauté the chicken seasoned with salt and pepper until golden. Add a portion of the sesame sauce to cook the chicken through.
  4. Once cooked, remove the chicken, let it cool slightly, and shred it.
  5. Finely chop or process the vegetables, removing excess moisture.
  6. Combine all ingredients and serve either hot or cold.
