Grilled Chicken with Spinach and Melted Mozzarella

For cooking
Instructions
- Preheat the oven to 400°F.
- Season the chicken with salt and pepper.
- Lightly spray a grill or grill pan with oil and cook the chicken until no longer pink, about 2 to 3 minutes per side.
- In a skillet over medium heat, add oil and garlic, sauté for 30 seconds.
- Add the spinach, salt, and pepper, and cook until heated through, about 2 to 3 minutes.
- Place the chicken on a baking sheet, divide the spinach evenly on top of each piece.
- Top each piece with mozzarella and roasted peppers, then bake until the cheese is melted, about 3 minutes.
