Instructions
- Preheat the oven to 350°F and prepare the crust by processing the cookies and pecans into crumbs, then mixing with melted butter.
- Pack the mixture into a pie pan and refrigerate for about 20 minutes before baking until lightly browned.
- Cook the drained pineapple with sugar and salt in a skillet until browned, then process until smooth.
- Whisk egg yolks with sugar and salt, then combine with softened gelatin and pineapple juice concentrate in a saucepan until thickened.
- Mix in the processed pineapple and refrigerate until set.
- Whip heavy cream with sugar to stiff peaks and fold into the chilled pineapple mixture.
- Pour the filling into the cooled crust, top with remaining whipped cream, and chill until set.
