Ingredients

The crust

  • 12 pieces pecan shortbread cookies
  • ½ cups chopped pecans
  • 2 tablespoons butter

The pie filling

  • 1 can (20 ounce) crushed pineapple
  • ½ cup granulated sugar
  • 1 tablespoon granulated sugar
  • Salt to taste
  • 3 pieces egg yolks
  • 1 box (3 ounce) pineapple-flavored gelatin
  • 1 cup frozen pineapple juice concentrate
  • 2 cups heavy cream

Instructions

  1. Preheat the oven to 350°F and prepare the crust by processing the cookies and pecans into crumbs, then mixing with melted butter.
  2. Pack the mixture into a pie pan and refrigerate for about 20 minutes before baking until lightly browned.
  3. Cook the drained pineapple with sugar and salt in a skillet until browned, then process until smooth.
  4. Whisk egg yolks with sugar and salt, then combine with softened gelatin and pineapple juice concentrate in a saucepan until thickened.
  5. Mix in the processed pineapple and refrigerate until set.
  6. Whip heavy cream with sugar to stiff peaks and fold into the chilled pineapple mixture.
  7. Pour the filling into the cooled crust, top with remaining whipped cream, and chill until set.
