Ingredients

The Pie Crust

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • 6 ounces unsalted butter, cold
  • ounces cold cream cheese
  • 2 tablespoons iced cold water

The Filling

  • 5-6 cups fresh pineapple, diced
  • cup brown sugar
  • cup granulated sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • tablespoons flour
  • ½ teaspoon salt
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon rum (optional)

Instructions

  1. Combine flour, sugar, and salt for the crust and freeze.
  2. Pulse half of the flour mixture with butter and cream cheese in a food processor.
  3. Add the remaining flour and pulse until crumbly, then add ice water and pulse until dough forms.
  4. Turn the dough onto a floured surface, shape into a disk, and chill for 30-45 minutes.
  5. Roll out the larger dough piece for the bottom crust and the smaller piece for lattice strips.
  6. Fit the bottom crust into a pie plate and refrigerate.
  7. Mix pineapple, sugars, spices, flour, salt, lemon zest, lemon juice, and rum for the filling.
  8. Pour the filling into the pie crust and decorate with lattice strips, brushing with egg wash.
  9. Cover the crust edges with foil and bake at 375°F for 40-45 minutes until bubbly and golden.
  10. Serve warm with ice cream.
