Pineapple Pie

The Filling

Instructions
- Combine flour, sugar, and salt for the crust and freeze.
- Pulse half of the flour mixture with butter and cream cheese in a food processor.
- Add the remaining flour and pulse until crumbly, then add ice water and pulse until dough forms.
- Turn the dough onto a floured surface, shape into a disk, and chill for 30-45 minutes.
- Roll out the larger dough piece for the bottom crust and the smaller piece for lattice strips.
- Fit the bottom crust into a pie plate and refrigerate.
- Mix pineapple, sugars, spices, flour, salt, lemon zest, lemon juice, and rum for the filling.
- Pour the filling into the pie crust and decorate with lattice strips, brushing with egg wash.
- Cover the crust edges with foil and bake at 375°F for 40-45 minutes until bubbly and golden.
- Serve warm with ice cream.
