Feta Oregano Salad

Ingredients

The salad

  • 8 ounces feta cheese
  • 8 ounces pitted Kalamata olives
  • cup fresh oregano leaves
  • 2 units lemons
  • scant ¼ cup extra virgin olive oil
  • to taste units freshly ground black pepper

To serve

  • to taste units toasted pita
  • to taste units crackers
  • to taste units lentils
  • to taste units pasta

Instructions

  1. Cut the feta into small cubes, wiping the knife clean between cuts.
  2. Arrange the feta, olives, and oregano leaves in a bowl or on a platter.
  3. Zest one lemon and peel the other, slicing the peel into thin wisps.
  4. Sprinkle the lemon peel across the platter.
  5. Drizzle with olive oil, add freshly ground black pepper, and squeeze some lemon juice over the top.
