Baked Ziti with Eggplant & Chicken Sausage

Ingredients

The pasta

  • 16 oz ziti pasta
  • 24 oz apple chicken sausage
  • 16 oz shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

The sauce

  • 28 oz crushed tomatoes
  • 15 oz fire roasted crushed tomatoes
  • 1/3 cup grated parmesan cheese
  • 1 tbsp minced garlic
  • 1 tsp oregano
  • 1/2 tsp ground thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt

The vegetables

  • 1 whole eggplant
  • 1/2 cup yellow onion, chopped

The seasonings

  • 1 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 1 1/2 tsp black pepper
  • 1/8 cup olive oil

Instructions

  1. Cut the eggplant into medium-sized cubes and season with salt, cinnamon, and black pepper. Drizzle with olive oil and bake for 25 minutes at 400°F.
  2. In a pot, combine crushed tomatoes, fire-roasted crushed tomatoes, grated parmesan, minced garlic, oregano, thyme, black pepper, garlic powder, and sea salt. Stir and cook for 10 minutes.
  3. Sauté chopped onion and sliced sausage until the onions are translucent and the sausage is slightly browned.
  4. Cook the ziti pasta according to package instructions, then drain.
  5. In a large bowl, combine the cooked pasta with the tomato sauce, roasted eggplant, sausage, onions, and 8 oz of mozzarella cheese. Mix well.
  6. Pour half of the pasta mixture into a baking dish, sprinkle with 1/2 cup of parmesan cheese, then layer with the remaining pasta mixture.
  7. Top with the remaining 8 oz of mozzarella cheese and bake at 400°F for 15 minutes.
