Instructions
- Cut the eggplant into medium-sized cubes and season with salt, cinnamon, and black pepper. Drizzle with olive oil and bake for 25 minutes at 400°F.
- In a pot, combine crushed tomatoes, fire-roasted crushed tomatoes, grated parmesan, minced garlic, oregano, thyme, black pepper, garlic powder, and sea salt. Stir and cook for 10 minutes.
- Sauté chopped onion and sliced sausage until the onions are translucent and the sausage is slightly browned.
- Cook the ziti pasta according to package instructions, then drain.
- In a large bowl, combine the cooked pasta with the tomato sauce, roasted eggplant, sausage, onions, and 8 oz of mozzarella cheese. Mix well.
- Pour half of the pasta mixture into a baking dish, sprinkle with 1/2 cup of parmesan cheese, then layer with the remaining pasta mixture.
- Top with the remaining 8 oz of mozzarella cheese and bake at 400°F for 15 minutes.
