Instant Pot Baby Potatoes

Ingredients

The potatoes

  • 1 lb Baby Potatoes (red or gold)
  • 1 cup Water

The seasoning

  • 1 Tbsp Olive Oil
  • 4 Tbsp Butter
  • ½ tsp Garlic Powder
  • ½ (1 oz) pkg Zesty Italian Dressing Mix

Instructions

  1. Add water to the inner pot of the pressure cooker and set a steamer basket inside.
  2. Scrub and rinse the potatoes, then place them in the steamer basket.
  3. Seal the pot lid and set the steam release knob to Sealing.
  4. Select Pressure Cook/Manual and set the timer for 12 minutes on high pressure.
  5. When cooking is complete, perform a Quick Release by turning the steam release knob to Venting.
  6. Once the pressure is released, carefully remove the steamer basket with the potatoes.
  7. Empty and dry the inner pot, then return it and set to Sauté mode.
  8. Add olive oil and butter to the hot pot, then add the cooked potatoes and let them brown slightly.
  9. Sprinkle the Italian dressing mix and garlic powder over the potatoes and stir to coat.
  10. Turn off Sauté mode and transfer the potatoes to a serving bowl, drizzling with any remaining butter/oil.
  11. Serve immediately.
