Ingredients

The potatoes

  • lbs Small New Potatoes (or Baby Potatoes), whole, unpeeled

The brine

  • ¾ cup Salt (regular table salt)
  • 7 cups Water, divided

For serving

  • 4 Tbsp Melted Butter

Instructions

  1. Add salt to the pressure cooker pot and stir in 2 cups of water to dissolve the salt.
  2. Add the potatoes to the pot.
  3. Pour in the remaining water.
  4. Close the lid and set the steam release knob to the Sealing position.
  5. Select the Pressure Cooker/Manual button and set the time to 8 minutes for baby potatoes or 9 minutes for larger ones.
  6. After cooking, perform a Quick Release by turning the steam release knob to the Venting position.
  7. Once the pin drops, open the lid and transfer the potatoes to a paper-lined plate to drain and dry.
  8. Melt the butter and serve it with the potatoes for dipping or pour it over them.
