Nectarine Salad with Cucumber, Basil and Goat Cheese

Ingredients

The salad

  • ¼ cup finely sliced red onion
  • 3 pieces ripe nectarines
  • 4 pieces Turkish cucumbers
  • cup torn basil leaves
  • ¼ – ½ cup goat cheese crumbles

The dressing

  • 3 tablespoons olive oil
  • 2 tablespoons champagne, sherry, apple cider or white balsamic vinegar
  • 2 teaspoons honey or alternative sweetener
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon Urfa Biber chili pepper (optional)

Optional additions

  • to taste tender greens or arugula
  • to taste toasted nuts of choice

Instructions

  1. Soak the thinly sliced red onion in salted water for 10-15 minutes to remove bitterness.
  2. Whisk together the dressing ingredients in a small bowl.
  3. Slice the nectarines and cucumbers and arrange them in a bowl or platter over optional greens.
  4. Rinse and drain the onions, scatter them over the salad, and top with basil leaves and goat cheese.
  5. Spoon the dressing over the salad and sprinkle with optional Urfa Biber.
  6. Serve immediately or over tender greens.
