Grilled Nectarine Salad with Citrus Ginger Dressing

Ingredients

Citrus Ginger Dressing

  • 1 ½ tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed orange juice
  • 1 teaspoon grated fresh ginger
  • ¼ teaspoon salt (optional)
  • ¼ teaspoon freshly ground black pepper

Nectarine Salad

  • 3 pieces nectarines, unpeeled, sliced into thick wedges
  • 4 cups baby lettuce blend
  • ½ cup chopped fresh mint
  • 4 pieces radishes, sliced
  • ¼ cup coarsely chopped almonds

Instructions

  1. Whisk together olive oil, orange juice, ginger, salt (if using), and black pepper to make the vinaigrette.
  2. Drizzle half of the vinaigrette over the nectarine wedges in a bowl and set aside the rest for the salad.
  3. Preheat the grill to medium-high heat and grill the nectarine wedges until golden, about 8 minutes per side.
  4. Prepare the salad by placing the baby lettuce blend on a platter and topping it with mint, radishes, and almonds.
  5. Arrange the grilled nectarines on the salad and drizzle with the remaining vinaigrette before serving.
