Green Goddess Tahini Dip

Ingredients

  • 4 cloves garlic
  • ¼ cup lemon juice
  • ½ cup tahini
  • 1 cup fresh herbs (cilantro, parsley, basil, dill, and/or mint)
  • 2 tablespoons fresh tarragon leaves (optional)
  • ½ teaspoon fine salt
  • 1 pinch ground cumin
  • 5 to 6 tablespoons ice-cold water

Instructions

  1. Combine garlic and lemon juice in a bowl and let it rest for 10 minutes.
  2. Strain the mixture through a fine-mesh sieve into a food processor, discarding the garlic solids.
  3. Add tahini, herbs, salt, and cumin to the food processor and blend until smooth.
  4. While blending, drizzle in ice-cold water, 2 tablespoons at a time, until the desired consistency is reached.
  5. Adjust seasoning if necessary and serve. Store leftovers in the refrigerator.
