Green Goddess Hummus

Ingredients

The base

  • ¼ cup tahini
  • ¼ cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 large garlic clove
  • ½ teaspoon salt
  • 1 15-ounce can chickpeas

The herbs

  • ½ cup fresh parsley
  • ¼ cup fresh tarragon or basil
  • 2 to 3 tablespoons fresh chives or green onion

Optional

  • 1 to 2 tablespoons water
  • to taste extra olive oil for serving
  • to taste chopped fresh herbs for garnish

Instructions

  1. Combine tahini and lemon juice in a food processor and process for about 1½ minutes.
  2. Add olive oil, parsley, tarragon, chives, garlic, and salt to the mixture and process for about 1 minute.
  3. Add half of the chickpeas and process for 1 minute, then add the remaining chickpeas and process until smooth.
  4. If the hummus is too thick, drizzle in water while processing until the desired consistency is reached.
  5. Transfer hummus to a serving bowl, drizzle with olive oil, and sprinkle with additional herbs.
  6. Store in an airtight container in the refrigerator for up to one week.
