Green Goddess Hummus Sandwich

Instructions
- Prepare the quick-pickled vegetables by peeling the carrots and slicing them into ribbons, and slicing the onion into thin rounds.
- Stuff the carrots into a mason jar and the onions into another.
- In a saucepan, combine vinegar, water, sweetener, salt, and optional red pepper flakes, and bring to a gentle boil.
- Pour half of the mixture into each jar, pressing the vegetables into the liquid, and let them cool to room temperature.
- To assemble the sandwich, spread hummus on each slice of toasted bread.
- Top one slice with cucumbers, lettuce, and pickles, then place the second slice on top, hummus-side down.
