Ingredients

The sandwich

  • 2 slices sturdy whole grain bread
  • ¼ cup homemade green goddess hummus or store-bought hummus
  • 1 inch cucumber, sliced thin
  • 1 to 2 leaves lettuce
  • to taste pickles

Quick-pickled vegetables

  • 5 to 7 medium to large carrots
  • 1 small to medium red onion
  • 1 cup plain white vinegar or white wine vinegar or apple cider vinegar
  • 1 cup water
  • ¼ cup honey or maple syrup or sugar of choice
  • 2 ½ teaspoons salt
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the quick-pickled vegetables by peeling the carrots and slicing them into ribbons, and slicing the onion into thin rounds.
  2. Stuff the carrots into a mason jar and the onions into another.
  3. In a saucepan, combine vinegar, water, sweetener, salt, and optional red pepper flakes, and bring to a gentle boil.
  4. Pour half of the mixture into each jar, pressing the vegetables into the liquid, and let them cool to room temperature.
  5. To assemble the sandwich, spread hummus on each slice of toasted bread.
  6. Top one slice with cucumbers, lettuce, and pickles, then place the second slice on top, hummus-side down.
